Ingredients
- for the brownie batter:
- 1 1/2 cups sugar
- 3 eggs
- 3/4 cups butter, melted
- 1/2 cups cocoa powder
- 2 tsp vanilla
- 1 cup Clean Crumbs All-Purpose Baking Mix
- 1/2 tsp salt
- for the peanut butter topping:
- 3 Tbsp yogurt
- 2 eggs
- 1/4 cups peanut butter
- 1/2 tsp vanilla
- 1/4 tsp salt
Directions
PREHEAT the oven to 350°F and lightly grease a 9x9-inch baking pan.
IN a large bowl, use a hand mixer to beat the eggs and sugar until light and fluffy.
IN a separate bowl, combine the melted butter, cocoa powder, salt, and vanilla extract. Add this mixture to the egg mixture and stir until combined. Gently fold in the Clean Crumbs until just incorporated.
POUR the brownie batter into the prepared pan and spread evenly.
TO make the peanut butter topping, whisk together the eggs, yogurt, and peanut butter until smooth. Dollop the mixture over the brownie batter, then use a butter knife to gently swirl it throughout the top.
BAKE for 20–25 minutes, or until the edges are set. If using an 8x8-inch pan for thicker brownies, bake for about 30 minutes.
A toothpick inserted in the center should come out with a small amount of moist batter attached, avoid overbaking for the fudgiest texture.
