Ingredients
- 1 cup mashed bananas (about 2-3 bananas)
- 2 large eggs
- 1/2 cups plain greek yogurt
- 1/2 cups coconut sugar
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1 cup Clean Crumbs All-Purpose Baking Mix
- 1/2 cups vanilla protein powder
- 1/2 cups chocolate chips divided
Directions
PREHEAT the oven to 350°F and lightly grease a loaf pan.
IN a large bowl, mash the bananas until smooth. Add the eggs, Greek yogurt, coconut sugar, and vanilla extract, whisking until fully combined and no lumps of yogurt remain.
WHISK in the cinnamon, then add the All-Purpose Baking Mix and protein powder. Stir until just combined, being careful not to overmix. Fold in half of the chocolate chips.
POUR the batter into the prepared loaf pan and sprinkle the remaining chocolate chips on top.
BAKE for 55–60 minutes, covering loosely with aluminum foil halfway through baking to prevent over-browning.
ALLOW the bread to cool completely before slicing and serving.
NOTE The crust may be darker than traditional banana bread due to the protein powder.
